Avocado Pesto Pasta

What you need


  • 6 rashers chopped bacon
  • 2 chicken breasts, cut into strips
  • 1 clove garlic, finely diced
  • 2 avocados, halved
  • 1 bunch of basil
  • 1/2 cup parmesan
  • 1/2 cup pine nuts
  • Juice of half a lemon
  • Zest of 1 lemon
  • 1/4 cup olive oil
  • Seasoning
  • Cooked tagliatelle pasta


  1. In a non-stick frying pan fry the bacon until just starting to colour, then add the chicken. Cook until nice and brown on both sides and then add the garlic for a minute, stirring frequently. Take off the heat and set aside.
  2. In a food processor blend together the avocados with the basil, parmesan, pine nuts, lemon juice & zest and olive oil until really smooth.
  3. Place the cooked pasta in the pan with the chicken & bacon and stir to combine, then add the avocado pesto sauce and stir again. Serve with grated parmesan.
