Bacon Crusted Poached Eggs

What You’ll Need:

  • 4 Eggs, whole, fresh and preferably fridge cold
  • 2 Eggs, whisked
  • 100g Flour
  • 100g Crispy bacon
  • 100g Panko breadcrumbs
  • Avocado, sliced, to serve
  • Bagels, to serve
  • 10ml white wine vinegar
  • 1/2 tbsp fine salt
  • sunflower oil, for frying

How You Make It:

  1. Bring some water up to a simmer, season with salt and vinegar, spin the water with a wooden spoon, then carefully drop in an egg in the centre.
  2. Remove the egg with a slotted spoon after about 1 1/2 minutes. You want the poached egg to be slightly undercooked as it will be cooked a second time following crumbing.
  3. Drop the egg into ice water to stop the cooking process. Roll in flour, egg then bacon crumbs.
  4. Fry in oil preheated to 170ºC/340ºF for about 1 minute, no longer. Drain on kitchen towel, pop on top of your avocado bagel, then get involved.
