Bacon n Eggs Breakfast Loaf

Are you planning on having a weekend filled with booze and frivolity? Well, if you are, we have the perfect recipe to cure your hangover. This Bacon n Eggs Breakfast Loaf will sort you right out. Yes it’s a little naughty, but when you’ve got a bad head that isn’t a pressing concern. This beauty is packed full of crispy bacon and cheese. The whole thing is brought together by six succulent eggs. After a couple of mouthfuls you’ll be feeling as right as rain.

What You’ll Need:

  • 400g stale bread, diced into 1″ chunks
  • 200g cheddar, grated
  • 6 eggs
  • 300ml Whole milk
  • 1 tbsp chives, chopped
  • 300g crispy bacon, diced
  • 1 tsp salt
  • 1 tsp pepper

How You Make It:

  1. In a large bowl (or sandwich bag), mix all of your ingredients. Leave to rest for half an hour or so.
  2. Pop your mix into a long loaf tin, cover with foil and bake for 25 minutes at 200ºC/400ºF. Remove the foil and bake for a final 10 minutes.
  3. Remove from the tin, slice and serve with ketchup!
