Put your yeast, sugar and water in a bowl and leave the yeast to bloom for 5 mins.
Add your flour, olive oil and salt and stir to combine. Turn out onto a floured surface and knead for 10 mins. Place in a lightly oiled bowl, cover with cling film and leave to rise for about an hour, until doubled in size.
Heat your oven to 200C/400F.
Heat some oil in a large saute pan and add your onions, red peppers and green peppers on a medium heat. Add you garlic and jalapeños and cook for 1 min.
Turn up the heat. Add your beef mince and taco spices and fry for a few minutes until the beef is browned. Add your passata and simmer for 15 mins with a lid on. Add your salt.
Shape your pizza dough into a rectangle and place in an oiled deep baking dish. Spread your spicy beef mix on the dough, leaving a 2cm border around the edge.
Sprinkle with your mozzarella cheddar mix, top with tortilla chips and sprinkle with your cheddar. Bake for 20 mins until the dough is risen and golden and the cheese is melted.
In the meantime, combine your red onions, lime juice and a pinch of salt in a bowl. Add your avocados and coriander and mash with a fork.
Top with sour cream, chopped tomatoes, chopped coriander and sliced jalapeños. Serve with guacamole!
