- Chuck your brownie pieces into a shallow baking dish.
- In a jug, mix together your drinking chocolate, coffee, milk and vanilla. Microwave for 1 minute, then stir well and pour over your brownies. Set aside to soak for half an hour or so.
- Add your cream, mascarpone and caramel sauce to a mixing bowl and whip until stiff and aerated. Fold through your cookies and nuts. Smooth this all over your layer of soaked brownies. Cover and chill.
- Cover in grated chocolate.
