  • 500g brownie pieces
  • 1 cup whole milk
  • 1 cup strong brewed coffee
  • 3 tbsp drinking chocolate
  • 1 tsp vanilla essence
  • 2 1/2 cups heavy cream, cold
  • 1/2 cup marscapone
  • 3 tbsp caramel sauce
  • 1/2 cup roasted pecans, crushed
  • 1/2 cup cookies, crushed
  • grated chocolate, for topping
  • caramel sauce, to serve


  1. Chuck your brownie pieces into a shallow baking dish.
  2. In a jug, mix together your drinking chocolate, coffee, milk and vanilla. Microwave for 1 minute, then stir well and pour over your brownies. Set aside to soak for half an hour or so.
  3. Add your cream, mascarpone and caramel sauce to a mixing bowl and whip until stiff and aerated. Fold through your cookies and nuts. Smooth this all over your layer of soaked brownies. Cover and chill.
  4. Cover in grated chocolate.
  5. Serve!
