Buffalo Chicken Chilli

  • 1 tbsp oil
  • 1 tsp salt
  • 1 onion, diced
  • 2 cloves garlic, finely diced
  • 2 tbsp smoked paprika
  • 1 tbsp cayenne pepper
  • 1 tsp cumin
  • 2 tins plum tomatoes
  • 1 tin black beans
  • 1 tin red kidney beans
  • 1/2 cup hot sauce
  • 1 cup chicken stock
  • 1 roast chicken, shredded
  • 1/2 cup sour cream
  • 1 tbsp chopped chives



  1. Heat the oil in a deep, heavy saucepan. Fry the onion with a dash of salt until soft then add the garlic. Continue cooking for a minute, or until golden and fragrant.
  2. Add the spices and fry for a further minute. Pour over the tomatoes and beans then bring to the boil. Half cover and reduce until the sauce has thickened.
  3. When the sauce has thickened pour in the chicken, sour cream and chives and stir everything together. Serve with rice and cheese.
