- Heat the oil in a deep, heavy saucepan. Fry the onion with a dash of salt until soft then add the garlic. Continue cooking for a minute, or until golden and fragrant.
- Add the spices and fry for a further minute. Pour over the tomatoes and beans then bring to the boil. Half cover and reduce until the sauce has thickened.
- When the sauce has thickened pour in the chicken, sour cream and chives and stir everything together. Serve with rice and cheese.
