Buffalo Popcorn Chicken Pasta

  • 1 cup cream cheese
  • 1 cup hot sauce
  • chives, to serve
  • farfalle, cooked al dente
  • 3 cloves garlic, finely chopped
  • 8 rashers bacon, diced
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1 cup cheddar, grated
  • 1/2 cup parmesan, grated
  • 3 chicken breasts, cubed
  • 1 cup plain flour
  • 1 tbsp smoked paprika
  • 1 tsp cayenne
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp black pepper
  • 1 tbsp salt
  • 1 cup buttermilk
  • oil, for frying


  1. Add flour, spices and salt to a bowl. Mix to combine. Dunk all of your pieces of chicken into the buttermilk, a few pieces at a time, then into the seasoned flour. Place on a rack to rest for 10 minutes.
  2. Fry in hot oil until crisp and cooked through. Set aside while you make your pasta.
  3. Fry the bacon until crisp, then add the butter and garlic. When fragrant (30 seconds), add hot sauce and cream cheese and stir to combine. Turn the heat off and add the cheeses and pasta. Stir through until creamy and nice. Dunk into a bowl and serve with the popcorn chicken!!! Bit of chives for some colour.
