3tablespoons of extra virgin olive oil
2 chicken breasts, cut into bite-sized pieces
14 oz smoked sausage, sliced diagonally
4 cloves of garlic, minced
3 1/2 cups low-sodium chicken broth
2 cups of heavy cream
450g dry penne pasta
2 tbsp of Cajun seasoning plus more for topping
1 cup shredded parmesan cheese
1/4 cup parsley, finely chopped
- Heat oil in a large heavy-bottomed saucepan over medium-high heat. Add chicken and cook until just golden brown. Add sausage, peppers, garlic and Cajun seasoning; stir to coat. Cook for about 3 minutes.
- Add chicken broth, cream and dried pasta. Stir to combine. Bring to a simmer.
- Reduce heat to low and let cook covered for 10-15 minutes, or until pasta is tender.
- Remove pot from heat and stir in parmesan cheese and parsley.
