Made with juicy prawns and seared rump steak this indulgent Cajun Surf & Turf Mac & Cheese is the ultimate comfort food. Perfect for parties!

  1. Whisk together the ingredients for the marinade. Place the prawns and steak in two different bowls and pour over the marinade; clingfilm and set aside for 30 mins.
  2. Remove the steak from the marinade and heat a tbsp of olive oil in a skillet. Fry on both sides then set aside. Leave to rest then chop until small chunks. 
  3. Meanwhile, heat the butter and fry the panko until golden. Season to taste. 
  4. In a medium saucepan melt the 50g of butter until it's foaming then add the flour. Stir together until you have a smooth paste and keep cooking until it smells a bit biscuity - roughly 30 seconds.
  5. Add the fajita seasoning then, in increments, add the milk, stirring vigorously each time and allowing the sauce to bubble up and thicken.
  6. Turn the heat down low and add the cheddar and cooked pasta, stirring the cheese through to make a luscious sauce. Season to taste. Take the sauce off the heat and gently stir the mozzarella through it.
  7. Add the chopped steak and pour into a baking dish. Sprinkle with the breadcrumbs. Bake for around 20 mins until bubbling.
  8. Meanwhile, fry the prawns - heat the oil until really hot then briefly sear the prawns on both sides, aiming for some blackened bits. Add the butter and parsley and a pinch of cayenne and serve over the mac & cheese.
