Candy Cane Chocolate Tart

28 sandwich cookies, crushed finely
50g melted butter
3 candy canes, crushed
1/2 cup double cream
1 cup single cream
10oz finely chopped milk chocolate
1 cup double cream
1 tbsp icing sugar

  1. Mix together cursed cookies, butter, and crushed candy canes.  Press into the bottom and sides of a tart tin.  Chill in the fridge for 30 minutes until set and ready to use.
  2. Meanwhile, heat creams in a pan until simmering. Turn off the heat. Add the chopped chocolate and stir gently to combine.  Add the peppermint extract and remove from heat to cool to room temperature.
  3. Pour into the chilled crust and transfer to the fridge for 40 minutes to set.
  4. Garnish with chocolate shaving and crushed candy canes before serving.
