Chicken Bacon Caesar Pasta Salad

What you need


  • 2 large chicken breasts
  • 1 tbsp oil
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 cup mayonnaise
  • 3/4 cup finely grated parmesan
  • 1/3 cup sour cream
  • 1 1/2 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tbsp salt
  • 1 tsp pepper
  • 3 finely chopped anchovy fillets
  • 1 finely chopped garlic clove
  • 3 cups cooked, cooled penne
  • 2 cups chopped romaine or little gem lettuce
  • 1 1/2 cups croutons
  • 1 cup chopped tomatoes
  • 1/2 cup bacon
  • Shaved parmesan


  1. Heat a griddle pan until it begins to smoke. Rub oil, salt and pepper into the chicken breasts, then griddle until cooked through and charred on both sides then set aside until cool enough to handle.
  2. Make the dressing by whisking together mayo, parmesan, sour cream, lemon juice and Worcestershire sauce then stir in the anchovies and garlic.
  3. Slice the chicken into 1 cm thick chunks then begin to build the salad in a big dish - pour in pasta, lettuce, croutons, tomatoes, bacon, sliced chicken and shave some parmesan over everything. Pour over the dressing and mix well.
