Put your chicken, peppers and onions onto a tray and sprinkle over fajita seasoning and olive oil. Grill on high for 10-12 minutes, turning occasionally. Meanwhile, lay the bottom half of your buns on a large baking tray and top with cheddar.
When the chicken mix is ready, spoon this all over your buns. Squeeze over 1 lime, sprinkle liberally with coriander then top with the mexican cheese, Put the top half of bun on and lay down a sheet of baking parchment before weighing down with another tray- this will keep your sliders together.
- Bake for 20 minutes at 180°C/350°F.
Dump your fries in the middle!
