Chicken Fajita Sweet Potato Skins

What You’ll Need:

  • 4 large sweet potatoes
  • 300g chicken breasts (diced)
  • 3 bell peppers (sliced)
  • 1 red onion (sliced)
  • 10ml vegetable oil
  • 1 packet fajita seasoning
  • 150g grated cheddar
  • spring onion (to serve)
  • sour cream (to serve)
  • salsa (to serve)

How You Make It:

  1. Start by pricking your sweet potatoes all over.
  2. Place them on a plate and microwave them on high for 8 minutes.
  3. Remove from the microwave, slice in half and hollow out the inside of the potatoes.
  4. Place on a baking tray and set aside for now.
  5. Heat a pan on the hob and add your oil. When the oil is hot add your chicken and fry until cooked, about 5 minutes.
  6. Remove chicken from the pan and add your onions and peppers. Cook down for 5/10 minutes, until the onions and peppers have softened.
  7. Re-add your chicken to the pan and season with salt and the fajita seasoning.
  8. Cook for a further few minutes. Then remove from the heat.
  9. Now stuff your hollowed potato skins with the fajita mix, top with the grated cheddar and they are ready to bake.
  10. Place into a hot oven at 200°C/ 392 °F for 10 minutes, until the cheese is nice and melty.
  11. Remove from the oven, dress with sour cream and spring onion and serve with a bowl of fresh tomato salsa.
  12. Simple, quick, delicious. Enjoy!
