• 10 chicken wings, cut at the joints (discard the wing tips)
  • 1 tbsp groundnut oil
  • 1 tbsp cayenne pepper
  • 1 tbsp turmeric powder
  • 1 tbsp ground coriander
  • 1 tsp salt
  • 1 tsp oil
  • 1 cup coconut milk
  • 1 cup peanut butter
  • 4 tbsp sweet chilli sauce
  • 1 clove garlic
  • 1 tsp ginger paste
  • 1 tbsp soy sauce
  • Lime slices to serve
  • Roughly chopped coriander
  1. Preheat the oven to 160°C/320°F
  2. Rub the chicken pieces with oil, cayenne, turmeric, coriander and salt. Bake for 40 minutes – careful not to give them too much colour as they’re being grilled later on!
  3. In a large ovenproof dish make a sauce from coconut, peanut butter, sweet chilli and soy sauce. Toss the cooked chicken in this and grill the whole thing on high to crisp and blacken the chicken and cook down the sauce. Turn over halfway through and blacken other side.
  4. Serve with as a starter with lime wedges and chopped coriander. Delicious!
