½ cup diced onion
¼ cup diced red bell pepper
2 chopped garlic cloves
½ cup shredded sharp cheddar
10 eggs, scrambled together
½ cup milk
¼ tsp black pepper
1 Preheat the oven to 220C. Bake until browned, turning halfway, about 35 minutes. Once the fries have been removed from the oven, lower the temperature to 175C.
2 In an oven-safe pan cook over medium heat, brown the ham about 5 minutes.
3 Add in the butter, onions, bell peppers and garlic until softened, 3-5 minutes.
4 Pour in eggs and milk.
5 Continue cooking over medium heat, stirring until the eggs start to set, about 5 minutes.
6 Turn off the heat. Stir in the shredded cheese.
7 Arrange the cooked fries on top of the egg mixture in a pattern.
8 Bake at 175C for 20 minutes until the eggs are cooked.
9 Serve with your choice of condiment
