• 4 eggs
  • 1 stick unsalted butter
  • 1 cup all-purpose flour
  • 1 cup water
  • 2 tbsp brown sugar
  • 1/4 tsp fine salt
  • warm chocolate sauce
  • 1 1/2 cups icing sugar
  • 3/4 cup unsalted butter
  • 2 tbsp whole milk
  • 1 cup marshmallow fluff
  • 1/4 tsp salt
  • sunflower oil, for deep frying
  • cinnamon sugar
  • mini marshmallows
  • 1 strawberry
  1. In a saucepan over low heat, melt together the butter, sugar, water and salt. Bring to a low simmer then add the flour in one go. Beat with a wooden spoon until it comes together in a ball and a thin film is catching on the edge of the saucepan. Take off the heat and leave to cool for 5 minutes.
  2. Beat in the 4 eggs, one at a time. Make sure each is completely incorporated before adding the next. After the 4th egg you should have a nicely smooth consistency.
  3. Draw  a circle around something circular- this should be the size of your pizza. Add your batter to a piping bag, and, starting from the middle, pipe outwards in a spiral. Chuck the spiral in the freezer for an hour or so.
  4. Fry in oil preheated to 375ºF for about 2 minutes on each side.
  5. Drain on kitchen towel, dust well with cinnamon sugar, then pop on your serving plate.
  6. Beat icing sugar, salt and butter until smooth. Fold through the marshmallow fluff. Pipe or spread this mix on top of your ‘pizza’. Drizzle over chocolate sauce and dot around a few little marshmallows. Add a strawberry if you fancy.
  7. Get your pizza cutter out.
