- Heat the oil in a large pan then add the bacon. Cook until crispy then add the garlic, tomatoes, cayenne pepper and seasoning. Cook out for 2 minutes then add the cream cheese and stir.
- Slowly pour in the vegetable stock and stir again until you have a smooth sauce. Throw in the spinach, parmesan, parsley and pasta.
- Toss the coat then serve up with a squeeze of lemon and some extra parmesan.
