Creamy Bacon Pasta

  • oil for frying
  • 6 bacon rashers, diced
  • 2 garlic cloves, crushed
  • 4 tomatoes, chopped
  • 1tsp cayenne pepper
  • salt and pepper
  • 2 cups vegetable stock
  • 2 cups cream cheese
  • 1 cup parmesan, grated
  • large handful spinach
  • 1tbsp chopped parsley
  • 3 cups cooked pasta
  • Optional: lemon juice, more parmesan, more parsley



  1. Heat the oil in a large pan then add the bacon. Cook until crispy then add the garlic, tomatoes, cayenne pepper and seasoning. Cook out for 2 minutes then add the cream cheese and stir.
  2. Slowly pour in the vegetable stock and stir again until you have a smooth sauce. Throw in the spinach, parmesan, parsley and pasta.
  3. Toss the coat then serve up with a squeeze of lemon and some extra parmesan.
