Craving a naughty crispy buffalo chicken sandwich but can't handle the guilt? These lettuce cups are here to save you. They've still got that delicous crispy buffalo chicken flavour and crunch, but they're a bit lighter....so I mean...have 4?
- Pre-heat oven to 180ºC.
- Coat chicken pieces in flour, then egg then press into the panko. Arrange on a parchment lined baking tray. Bake for 30 minutes until golden brown.
- Meanwhile, in a large sauce pan, melt butter over medium heat, add hot sauce, honey and pepper. Bring to a boil and let thicken just slightly. Toss chicken in sauce to coat.
- Make a blue cheese dressing by whisking sour cream, mayonnaise, lemon juice, salt pepper, blue cheese,1 tbsp chopped chives until combined.
- Top lettuce cups with buffalo chicken, followed by blue cheese sauce, chopped celery and chives.
