Preheat oven to the highest it'll go (it needs to be super hot to make a decent pizza).
Roll out the pizza dough to an oval shape and lay on a lined baking tray.
Spread some mustard in the middle of the oval (leave some space around the edges to fold in) followed by a few spoonfuls of béchamel and a sprinkling of emmental. Fold over the edges and pinch the edges together. Finally top with ham and and make two hollows for the eggs to sit in and grate the whole thing with pepper.
Bake until the dough has browned nicely and the eggs are cooked but still have a bit of a wobble.
