Croque Monsieur Skillet Chicken

1 tbsp oil
3 boneless, skinless chicken breasts
60g butter
60g flour
700ml whole milk
1 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg
3 cups grated Swiss cheese
1 cup chopped ham
Finely chopped parsley
Garlic Bread




  1. Heat a large open-proof skillet over medium heat.  Add oil and sear chicken until golden brown and cooked through about 6 minutes each side.  Take chicken out, let cool then slice.
  2. In the same pan over medium heat, add butter and melt.  Add flour and cook until slightly nutty smell.  Gradually add the milk while whisking continuously to incorporate into a smooth sauce.  After all the milk is added, bring to a boil and stir in half of the cheese, ham, and chicken.
  3. Top with remaining cheese in an even layer.  Put under the grill until bubbly and golden brown, about 5-6 minutes.  Top with chopped parsley.
  4. Serve over garlic toast
