Fry off your mince until nicely browned and starting to catch on the bottom a little (and getting a bit crispy- this means flavour). Add your taco seasoning, stir to combine, then add your enchilada sauce. Cook for 10 minutes on low, remove from heat and leave to cool.
Grab a flour tortilla and place some cheese in the middle. Add some beef, then a layer of chips. Now sour cream, lettuce and tomato. Finish with a little more cheese then start to wrap your tortilla. Fold one piece of tortilla over the filling, then hold that fold in place as you fold in the next section of tortilla. Keep going until you have a nice parcel.
Spray a pan with cooking spray and place the parcel, folded side down, and cook for 2 minutes on each side.
