Dessert Nachos

What You’ll Need:

  • 225g butter, melted
  • 200g caster sugar
  • 225g soft brown sugar
  • 2 eggs
  • 1/2 tbsp vanilla essence
  • 375g (13 oz) plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 teaspoon salt
  • 200g chocolate chips

How You Make It:

  1. Cream the butter with the two sugars with a wooden spoon or an electric beater. Add the eggs individually and beat in. Now the vanilla essence. Fold in the flour, bicarbonate of soda, salt and chocolate chips until nicely incorporated and the mixture is thick but smooth.
  2. Transfer to a lined baking tray and pop in the freezer for an hour or so. Bring out and cut into triangles, pop back on the baking tray and bake for 15 minutes at 190ºC/370ºF.
  3. Load into a serving dish, top with vanilla ice-cream, raspberries and sauces of your choice. Delicious.
