Dragon Eggs

What You’ll Need:

  • 600g sausage meat
  • 3 large mild red chillies
  • 75g cream cheese
  • 20ml hot sauce
  • 75g red leicester
  • 120g plain flour
  • 120g cornmeal
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 240ml milk
  • 1 egg
  • Sunflower oil, for deep frying

How You Make It:

  1. Mix together the cream cheese, hot sauce and cheese. Cut the top off the chillies, scoop out the seeds and pith, then spoon in as much cheese mix as you can.
  2. Separate the sausage meat into 3 flat patties. Pop the chillies in the middle of each, then wrap the sausage meat around and shape with your hand to form ‘eggs’.
  3. Pop on a baking tray and bake for 15 minutes at 200ºC/400ºF. Bring out and leave to cool slightly.
  4. Whisk together the plain flour, cornmeal, salt, sugar and baking powder. Mix through the egg and milk until you have a thick mixture. Dip the cooled egg in there, cover in batter then pop into hot oil and fry for 3 minutes.
  5. Drain on kitchen towel then serve, preferably in a wood or a forest.
  6. Eat before they hatch!
