• 2 cups cream cheese
  • 1/12 cups grated red cheddar
  • 1 tbsp chopped Jalapeños
  • 2 tbsp chopped coriander
  • 1 tsp black pepper
  • 1 tsp salt
  • 4 chicken breast
  • 1/2 cup fajita spice mix
  • 1 cup red cheddar
  • 3 cooked mixed peppers
  • 1 cooked white onion
  • 3/4 crushed nachos
  1. Preheat the oven to 180°C/360°F.
  2. Mix together the cream cheese, red cheddar, jalapenos, chopped coriander, black pepper and salt. Set this mix aside while you make the chicken roll ups.
  3. Slice the chicken breasts lengthways and bash each half under a sheet of baking paper to thin it out.
  4. Dip both sides of each piece of breast in the fajita spice mix, sprinkle with cheddar, peppers and onions and roll up into a tight bundle.
  5. Arrange them neatly in a greased baking dish and cover with the cheese mixture, sprinkle with crushed nachos and bake for 30 – 40 minutes, until the internal temperature reaches 71°C.
