In the second episode of Corner Shop Challenge, Sophie scavenged in her local shops with £5 to bring you... Fajita Meatball Naan Bread Pizza! Sub in any onion you have to hand, and any Tex Mex seasoning sachet to bring you some spice for a quick and thrifty masterpiece!
- Heat your oven to 180°C/350°F.
- Heat a little vegetable oil in a saute pan and add your onion. Fry for 5 mins over a medium heat until softened and starting to caramelise. Add half your seasoning sachet (saving the other half for another use!) and cook out for 2 mins.
- Add your tomato puree, tin of meatballs and about 150ml water and stir to combine. Bring to a boil, then gently simmer for 10 mins until your sauce is thick and your meatballs are cooked through.
- Place your naan bread on a tray. Distribute your meatballs and sauce over the top of both your naan breads, then sprinkle with your cheese. Bake for 12 mins until your cheese is melted and your naan crust golden. Serve immediately!
