Fajita Pasta Salad

  • 2 chicken breasts, sliced
  • 3 peppers, sliced
  • 1 red onion, cut into slithers lengthways
  • 1 packet fajita seasoning
  • 2 tbsp olive oil
  • 1/2 cup olive oil
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1 clove garlic, finely chopped
  • Dollop of honey
  • Lettuce leaves
  • Cooked pasta
  • Chopped coriander


  1. Arrange the chicken, peppers and onion on a baking tray then season the chicken with the fajita mix & oil. Grill for 15 minutes on high, turning occasionally, until chicken is cooked through.
  2. Make your salad dressing: whisk together olive oil, sour cream, lime juice, honey and garlic.
  3. Toss together the grilled chicken & vegetables with the lettuce leaves, cooked pasta, some coriander and the dressing. Top with finely chopped red chilli.
