Fajita Trifle

What You’ll Need:

  • 6 chicken breasts, sliced
  • 3 onions, sliced
  • 2 red peppers, sliced
  • 1 orange pepper, sliced
  • 1 – 2 yellow peppers, sliced
  • 1 packet taco seasoning
  • 1 tbsp salt
  • guacamole, about 6 avocados worth
  • Tomato salsa, lots
  • 2 spring onions, sliced
  • sour cream, lots
  • Cheddar cheese, grated
  • Tortilla wraps, for the table

How You Make It:

  1. Chuck your chicken, peppers, onions, seasoning, salt and a drizzle of oil onto a big baking tray. Mix together then bake at 200degs for 25 minutes, or until nicely coloured and charred in places.
  2. Layer your trifle! Chicken at the bottom, then cheese, then guacamole, then salsa, then sour cream, then repeat until full. Top the final salsa layer with spring onions.
  3. Grab a big spoon.
