BBQ Chicken Sliders

  • 6 buns, cut in half
  • 3 cups shredded chicken
  • 1/2 cup cooked bacon bits
  • 1 bottle nice BBQ sauce
  • 6 slices red leicester cheese
  • 2 tbsp melted butter
  • a squeeze of BBQ sauce

Pesto Chicken

  • 6 buns, cut in half
  • 3 cups shredded chicken
  • 1/2 cup pesto
  • 1/2 cup grated mozzarella
  • 2 tbsp butter mixed
  • 1 tbsp grated parmesan

Buffalo Chicken

  • 6 buns, cut in half
  • 3 cups shredded chicken
  • 1 1/2 cups buffalo sauce
  • 4 scallions/spring onions
  • 6 slices mature cheddar cheese
  • 2 tbsp melted butter
  • 1 tbsp buffalo sauce

Ranch Chicken

  • 6 buns, cut in half
  • 1 cup cream cheese
  • 1/2 cup yoghurt
  • 3 cups shredded chicken
  • 2 tbsp ranch seasoning
  • 1/2 cup cooked bacon bits
  • 2 tbsp chopped chives
  • 2 tbsp melted butter
  • 1 tsp dried mixed herbs

BBQ Chicken 

  1. Preheat the oven to 180°C/360°F.
  2. Spread the chicken over the bottom half of the buns (pack them closely in a baking tray) and pour over the BBQ sauce. Top with the cheese and the second layer of buns.
  3. Mix together the melted butter and herbs and brush over the buns then cover and bake for 20 – 30 mins.

Pesto Chicken

  1. Preheat the oven to 180°C/360°F.
  2. Spread the chicken over the bottom half of the buns then add dollops of pesto and mix it all together. Top with grated mozzarella and then the top halves of the buns.
  3. Mix together the melted butter and parmesan and brush over the buns then cover and bake for 20 – 30 mins.

Buffalo Chicken

  1. Preheat the oven to 180°C/360°F.
  2. Mix the chicken and buffalo sauce in a bowl and then spoon the mixture over the buns. Top with spring onions then cheddar and the second layer of buns.
  3. Mix together the butter and remaining buffalo sauce and brush over the buns, then cover and bake for 20 – 30 mins.

Ranch Chicken

  1. Preheat the oven to 180°C/360°F.
  2. Mix the cream cheese and yoghurt together and add the ranch seasoning and combine.
  3. Mix through the chicken and bacon bits then spread the whole mix on to the bottom layer of buns.
  4. Sprinkle with chopped chives and cheddar then place the second layer of buns on top.
  5. Mix together butter with the dried herbs and brush over the buns, then cover and bake for 20 -30 mins.

  • 1 tsp dried mixed herbs

How You Make It:
