  1. Heat oven to 180°C. 
  2. Combine your mustard, oil, salt and pepper in a bowl. Rub all over your beef joint.
  3. Roast for beef for 50 mins, then remove from the oven and leave to cool. Once cooled to room temperature, transfer to the fridge. When your beef is cold, carve into thin slices.
  4. In a large saute pan, heat your olive oil over a medium heat. Add your onions and carrots and fry off for about 10 mins until soft and starting to caramelise. Add your garlic and cook out for 2 mins.
  5. Pour in your beef stock, passata, lager, whisky, beef dripping and bay leaf. Bring to a boil, then turn down the heat and add your gammon - simmer for 20 mins until your sauce has thickened slightly and has a lovely depth of flavour. 
  6. Remover the gammon from the sauce, discard your bay leaf and pour your sauce into a blender. Whizz until you have a totally smooth sauce, then pour back into your pan. Add your hot sauce and Worcestershire sauce, then season to taste.
  7. Shred your gammon with two forks and set aside.
  8. Arrange your sausages on a baking tray. Bake for 25 mins at 190°C until they are browned and delicious looking. Set aside until cool enough to handle, then slice in half lengthways.
  9. Lay two slices of toasted bread on a chopping board. Layer with three sausage halves, gammon, roast beef and a handful of cheddar. Grill for 3 mins until your cheese has melted.
  10. Place one of your slices on top of the other and top with another piece of toast. Drape your cheese over the top and edges, then pop your sandwich in the oven at 170°C for 10 mins, or until your cheese has melted and the inside is hot.
  11. Place your sandwich on your serving dish. Pour your sauce over the top so that it drips down the sides. Top with a fried egg and serve with fries!
