Giant M&M Cookie Ice Cream Stack

For the cookie dough (enough for three big layers):

  • 425g plain flour
  • 1tsp bicarbonate of soda
  • large pinch salt
  • 300g melted butter
  • 300g light brown soft sugar
  • 150g caster sugar
  • 2 eggs plus 1 egg yolk
  • 300g peanut M&Ms
  • 200g white chocolate chips

For the Fillings:

  • 3tbsp peanut butter
  • 3tbsp Nutella
  • 2 discs vanilla ice cream

For the Toppings:

  • 200g melted dark chocolate
  • handful crushed peanut M&Ms



  1. Preheat the oven to 170c. Shape your ice cream into 2 discs and freeze- it needs to be really firm for when you build up your stack. Now line three baking trays with greaseproof paper. Set aside.
  2. For the cookie dough, whisk together the melted butter, vanilla and sugars. Add the eggs and continue to whisk until thick. Add the plain flour, bicarbonate of soda and salt. Stir into a thick dough, then add the peanut M&Ms and chocolate chips.
  3. Split the dough into three and form into thick even discs. Place one on each prepared baking tray (make sure there is space for spreading). Bake for 15 minutes, then allow to cool on the tray (they will be soft when you get them out but as they cool they will firm up).
  4. Once the cookies are completely cool it's time to assemble. Place one cookie down, spread with Nutella and top with an ice cream disc. Layer on another cookie followed by the peanut butter, other ice cream disc and final cookie. Cover half the stack with melted chocolate and sprinkle on broken up M&Ms.
