Hot Chocolate Fudge Pudding

What you need

Ingredients

  • 200g dark chocolate
  • 175g butter
  • 120g soft brown sugar
  • pinch sea salt
  • 100g ground almonds
  • 2tbsp cocoa powder
  • 4 eggs
  • 150g self raising flour
  • 150g chocolate fudge bars
  • Extras: ice cream, caramel sauce

Directions

  1. Preheat the oven to 180c. Break the chocolate into small pieces and place in a food processor along with the butter, almonds, sugar, salt and 1tbsp of cocoa powder.
  2. Turn the food processor up to high and blitz the ingredients until smooth. Now add the flour and eggs. Blitz again to fully combine the ingredients.
  3. Grease a bakeware dish with butter then sprinkle on the remaining cocoa. Shake the dish to fully coat the butter with cocoa then discard any extra.
  4. Spoon the cake mixture into the dish and level off with a spatula. Sprinkle the broken up fudge bars over the top. Bake for 20 minutes. It should be set on top but gooey underneath.
  5. Enjoy with ice cream.
