Make the pizza dough - it's best to make this, controversially, in a food processor! Add the salt and flour and mix until all combined, then add the olive oil, yeast and warm water.
Keep the food processor going until the dough forms a ball that spins round on top of the blade. Keep going for 30 seconds then remove - you should have a smooth, slightly sticky dough.
Allow to rise for around 40 mins while you make the mac & cheese.
Fry the bacon pieces until crispy then add the chopped jalapenos and fry for a few seconds, then add the cayenne and the butter and allow to foam up. Stir in then butter to make a paste and cook gently for a minute or so before adding the milk in stages, allowing the mixture to come to a simmer and thicken before each addition. Add the mustard.
When you have a smooth sauce turn off the heat and add the cooked macaroni and the cheeses. Stir together and allow to cool.
Oil a skillet and gently press the dough to the edges - leave a rim as the dough is going to rise up around the mac and cheese.
Make sure the mac is cold and spoon it onto the dough. Cover with a towel and leave to rise somewhere warm.
When the dough has risen around the pasta, then place the whole thing in the oven and bake until the sides are a dark golden brown and the whole thing slides easily out of the skillet. Enjoy!
