  • 4 cups macaroni pasta
  • 5 cups milk
  • 3/4 cup butter
  • 3/4 cup plain flour
  • 1tbsp mustard
  • salt and pepper, to taste
  • 1 cup crumbled blue cheese
  • 2 cups grated cheddar
  • 1 cup cubed brie
  • 1 cup cubed camembert
  • 2 cups fresh white bread crumbs
  • 1 cup diced bacon
  • 3tbsp oil
  • 1tbsp chopped sage
  • 1tbsp chopped rosemary
  • 1/2 cup chopped cranberries

  1. Melt the butter in a large deep saucepan. Add the flour and seasoning and stir together. Cook out for 1 minute.
  2. Add the milk a little at a time, stirring constantly. Allow to thicken slightly then stir in the mustard and add the pasta. Place the lid on and cook for about 15 minutes (or until the pasta is cooked through). Stir occasionally to prevent sticking.
  3. While the pasta is cooking, make the festive crumb topping. Simply fry the bacon in the oil until crisp, then add the sage, rosemary and cranberries. Stir together then tip in the breadcrumbs. Stir over a high heat until the crumbs turn a deep golden brown colour. Set aside.
  4. Once the pasta is cooked through, add the cheeses. Stir together until they've melted then season again if necessary and serve up in festive bowls. Top with the festive crumb.
