What’s better than blending beer and cheese? Throwing chorizo into the mix, obviously. Perfect when combined with McCoys’ new Sour Cream & Onion Muchos, this subtly spicy twist on a party staple proves that sometimes, more is more. You’ll never want to snack on anything else.

What’s better than blending beer and cheese? Throwing chorizo into the mix, obviously. Perfect when combined with McCoys’ new Sour Cream & Onion Muchos, this subtly spicy twist on a party staple proves that sometimes, more is more. You’ll never want to snack on anything else.

  1. Heat a frying pan over a medium-high heat. Add your chorizo and fry for 3 mins until browned and tender. Tip into your serving dish.
  2. Pour your lager into a saucepan and heat until bubbling. Combine your two cheeses with your cornflour and cayenne pepper in a medium sized bowl, then tip this mixture into your beer and whisk until you have a smooth sauce.
  3. Pour this mixture over your meat in the dish.
  4. Combine your tomatoes, red onion, jalapeno, coriander and lime juice in a bowl. Set aside. 
  5. When ready to serve, grill your dish on a high heat for 5 mins until the mixture is bubbly. Garnish with sour cream and salsa, surround with your McCoys Muchos and serve immediately!
