Mini Chocolate Oreo Donuts

For the donut:

100g Chocolate Creme Oreo, plus 10g for dusting
200g plain flour
120g caster sugar
1 tsp baking powder
240ml low fat buttermilk
60ml vegetable oil
120ml skimmed milk
1 tsp vanilla essence
50g cocoa powder

For the glaze:

1 tbsp skimmed milk
5 tbsp icing sugar
1/4 tsp vanilla essence

(Serves 15)


Preheat the oven to 170°C.

In a large bowl, add all of your donut ingredients and whisk well to combine. The mix should be smooth. Pop your donut batter into a piping bag and snip off the end to reveal a thick hole.

Grease a mini-donut tray. Squeeze in the batter so it comes almost half way up the mould. Bake for 15 minutes. Leave to cool, then remove from the tray.

Mix your icing ingredients together. Dip each donut in the icing (or spoon over).

Sprinkle over a few crushed Oreo pieces.
