• 8 fresh lasagna sheets
  • 1/4 cup unsalted butter
  • 1/4 cup plain flour
  • 3 cups whole milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg
  • 1 Cup grated gruyere cheese
  • 1 sheet pre-rolled puff pastry
  • 1 egg, beaten with 1 tbsp water
  • 2 cups cooked ham, shredded
  • 12 or so slices swiss cheese
  1. Make your cheese sauce. Foam the butter in a pan over low-medium heat then add your flour. Cook out for a minute or so. Add your milk gradually, whisking all the time, until it is all incorporated. Season the white sauce with salt, pepper and nutmeg, then add your gruyere. Cook until thick and bubbly, then remove from heat.
  2. Pop a couple of ladles of sauce in the bottom of your lasagna dish, then place down a layer of noodles. Add a bit more sauce. Go in with a third of your ham, a layer of cheese slices and then some more noodles. Repeat twice. Stop before the 4 layer of noodles and top with puff pastry. Fold in the edges of the pastry so they are bunched around the side of the dish. Brush with egg wash and bake for 40 minutes at 350ºF.
  3. Leave to cool for a few minutes, then serve. Top with confectioners sugar if you are that way inclined.
