Pain au Chocolat Pudding

What You’ll Need:

  • 12 Pain au Chocolate
  • 150g dark chocolate, broken into pieces
  • 150ml whole milk
  • 400ml double (heavy) cream
  • 4 large eggs
  • 100g sugar
  • White chocolate (optional)

How You Make It:

  1. Cut the pain au chocolats in half and place them, cut side up, in a baking dish of your choosing. You want the pain au chocolate halves to reach the top of the dish, ideally.
  2. Make your chocolate custard. Heat your milk and cream together in a pan until almost at boiling point, then add in your chocolate. Leave to cool slightly.
  3. Whisk together your eggs and sugar in a bowl and, while still whisking, pour in your chocolate mix. Pour this custard all over your pain au chocolats. Top with white chocolate if using, then bake in an oven preheated to 150ºC/300ºF for 30 mins or until crisp on top and wobbly and unctuous inside.
  4. Nice with vanilla ice-cream.
