• 2 sheets puff pastry (about 3mm thick)
  • 1 cup tomato passata
  • 2 cups grated mozzarella cheese
  • 1/2 cup butter, melted
  • 3 cloves garlic, crushed
  • 1tbsp chopped parsley
  • salt and pepper to taste
  1. Preheat the oven to 190c.
  2. Spread the tomato passata over the first layer of pastry in a triangle shape. Top with the grated mozzarella followed by the other pastry sheet. Press down.
  3. Cut through both layers of pastry to form a triangle. Discard the trimmings.
  4. Now make incisions up both sides of the pastry, leaving about an inch uncut up the centre.
  5. Twist each strip of pastry then place down. Neaten up then brush with the garlic butter.
  6. Bake for 25 minutes or until golden brown and cooked through.
