• 4 large potatoes

  • 100ml pizza sauce
  • 200g fresh mozzarella
  • Handful mushrooms (sliced)
  • Handful spinach leaves
  • 100g parma ham
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  1. Slice your potatoes thinly (about 1/8 inch thick) and set aside.
  2. Add you oil to a hot skillet and then layer your potato slices in a spiral going into the middle, making sure the potato slices are slightly overlapping.
  3. Cook your potatoes for 5 minutes (covered) and then add your toppings, starting with the pizza sauce and finishing with your egg.
  4. Sprinkle with oregano and pepper and then bake at 180°C/350°F for 25 minutes.
