Quesadilla Chicken Lasagna

What you need


  • 3 cups shredded chicken
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp cayenne
  • 1 tsp oregano
  • 1 tsp salt
  • 1 onion, diced
  • 2 tbsp diced jalapeños
  • 2 tbsp olive oil
  • 3 mixed peppers
  • 8 tortillas
  • 8 slices red leicester
  • 8 slices mozzarella
  • 1 cup salsa


  1. Heat the oil over medium heat and add the onions, peppers and salt. Fry for 10 minutes or so, stirring frequently, until nicely golden brown, translucent and sweet.
  2. Add spices and cook briefly before adding jalapeños and chicken. Stir well to heat through and break down a little. Remove from heat.
  3. Lay 4 cheese slices (2 of each type) on 4 of your tortillas and lay another on top of each.
  4. Pop this first quesadilla in the bottom of a lined cake tin. Spoon in a third of your chicken mix and top with a third of your salsa. Layer accordingly, then cover and bake at 200°C for 20 minutes.
  5. DIG IN.
