Red Pepper Street Tacos

What you need

Ingredients

  • 2 cups diced red pepper
  • 2 eggs
  • 4 tbsp chia, 1/3 cup warm water
  • 4 tbsp Herbalife personalized protein powder
  • 1 tbsp plain flour + 1/4 tsp salt

Directions

  1. Add the chia seed to the warm water and stir for a minute or so. The chia will form a glutinous paste. To a blender, add all of the remaining ingredients, then add the chia. Blend until smooth. Get a pan over medium heat and brush with coconut oil. Add a couple of tablespoons of the mix to the centre of the pan and carefully smooth out to make a circular taco. Heat gently until the top of the taco appears dry, then flip the taco and fry briefly on the other side. Repeat until your mix is used and you have a pile of tacos. Serve with the toppings of your choice!
