Afghan Beef Noodle Soup

Tom walks us through his interpretation of Afghan Aush - a delicious meat-based noodle soup, versions of which are also central features in Iranian, Azerbaijani and Turkish cuisine. Tom’s less-traditional variation features slow-braised, spiced beef short ribs in a rich sauce of tomatoes and chickpeas, and is served atop golden, buttered tagliatelle.
