• 1 small free-range chicken, whole
  • 1 brown onion, roughly chopped
  • 8 little tomatoes
  • 4 tbsp white wine vinegar
  • 2 red chillies, de-seeded and roughly chopped
  • 2 tbsp oil
  • 1 tbsp ginger powder
  • 1 1/2 tbsp smoked paprika
  • 1 tbsp oregano
  • 1 tsp salt
  • 1/2 tbsp garlic powder
  • sweetcorn and fries, to serve (optional)
  1. Combine your garlic powder, oregano, paprika, ginger powder and salt in a small bowl then toss on the chicken. Rub all over and in the nooks and crans. Pop him in the slow cooker.
  2. Grab your blender or food processor. Put in your chillies, onion, tomatoes, vinegar and oil. Blend until you have a nice paste. Loosen with water if too thick.
  3. Pour this over your chicken in the cooker. Place the lid on and cook on high for 4 hours.
  4. Pull the guy out, shred with two forks and remove the bones.
  5. Reduce the sauce in a saucepan over a medium heat. Blend with a stick blender if desired.
  6. Plate up with fries and corn, if using, then spoon over the extra sauce.
