• 600g pork ribs
  • 1/2 tbsp coriander seeds
  • 1/2 tbsp fennel seed
  • 2 cups chicken stock
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 2 tbsp fish sauce
  • 100g flat rice noodles per person, to serve
  • 5 cloves
  • 5 slices ginger
  • 4 cloves garlic
  • 1/2 an onion, sliced thinly
  • coriander, mint, beansprouts, red chilli, lime- to serve
  1. Pop all of your ingredients in the slow cooker and cook on high for 4 hours.
  2. Cook your noodles according to packet instructions, drain and place in your bowls to serve. Ladle over the broth before stripping the meat off a couple of ribs and placing on top.
  3. Dress with lime, herbs, beansprouts, and chillies.
  4. Delicious.
