Sparkling Wine Berry Sorbet

What you need


450g mixed berries
8 tbsp Barefoot Bubbly Pinot Grigio
250g caster sugar
125ml water




1. Bring the sugar and water to a boil, then slowly simmer until all of the sugar has dissolved

2. Set aside to cool completely

3. Blitz the berries until they’re smooth

4. When the sugar syrup has just about cooled, slowly add to the strawberries and continue to blitz until completely smooth

5. Add the Bubbly Pinot Grigio

6. Pour the mix into a really cold loaf tin and set in the freezer

7. Every hour, for approximately four hours, run a fork through the mix to stop it from crystallizing

8. Scoop, serve and finish by pouring Bubbly Pinot Grigio over the top

9. Enjoy!
