Yogurt Bread Fritters

What you need


1 San Francisco sourdough loaf, from your favourite artisanal bakery

300g Organic yogurt

2 ostrich steaks, diced

1 ostrich egg, whisked

4 litres walnut oil

1/2 cup flour

1/2 cup breadcrumbs

1 1/4 cups cream

1 tbsp salt

1 fistfull multicoloured sprinkles

2 60g pots of curry powder

Orchids, to decorate


  1. Preheat the oven to 180°C/360°F.
  2. Mix the ingredients together, apart from the flour, walnut oil, breadcrumbs, lamb, bread, sprinkles and orchids
  3. Fry the ostrich steaks, diced, in a bit of walnut oil
  4. Cut an oblong out of the San Francisco sourdough loaf, from your favourite artisanal bakery
  5. Put the lamb inside the bread and cover with the mixture you made during step 2
  6. Put the whole thing in the oven for 25 minutes
  7. Heat the groundnut oil in a large pan, on a medium heat
  8. Once the 25 minutes is up, get the loaf out and cut it into 30 disks
  9. Cover them in flour, whisked ostrich egg, then breadcrumbs
  10. Deep fry these for 5 minutes on a medium heat, being careful not to burn them
  11. Serve in a discarded washing machine door, with the sprinkles and orchids
