- Wash and chop your new potatoes in half, add to a pot with cold water and season generously with salt. Bring to the boil and cook until fork tender. Then drain and allow to cool.
- In a small pan heat your chilli oil, add in the slice garlic and spring onions and cook on low until the garlic begins to crisp.
- Remove from the heat.
- In a small bowl, mix together the mayonnaise, salt and pepper and spring onions.
- Dress your potatoes with the mayo mixture and then spoon over the crispy chilli oil and enjoy!
