5 Ingredient Challenge Chilli Oil Potato Salad

  1. Wash and chop your new potatoes in half, add to a pot with cold water and season generously with salt. Bring to the boil and cook until fork tender. Then drain and allow to cool. 
  2. In a small pan heat your chilli oil, add in the slice garlic and spring onions and cook on low until the garlic begins to crisp. 
  3. Remove from the heat. 
  4. In a small bowl, mix together the mayonnaise, salt and pepper and spring onions. 
  5. Dress your potatoes with the mayo mixture and then spoon over the crispy chilli oil and enjoy!
