Caramel Apple Pie Roll

  1. Pre-heat oven to 180ºC and line a 9x13”baking sheet with parchment paper
  2. Using a hand mixer whisk eggs together until light, pale and fluffy, about 5 minutes.
  3. Add the cake mix, oil, milk, cinnamon, allspice and nutmeg.  Whisk until smooth. Pour 1/2 into the prepared baking sheet. (Make two or make some fluffy cupcakes if you want!)
  4. Bake for 12 minutes until spongy when touched and golden brown.
  5. Remove from the oven, sprinkle a clean tea towel with icing sugar. flip cake out onto bowl and cut a small slit in the bottom the cake.  Roll into a log gently and let rest to cool
  6. Meanwhile, heat butter in a saute pan over medium heat. Add apples, cinnamon, and brown sugar.  Cook until just softened, remove to cool.
  7. Unroll cake gently, spread apples evenly over cake and drizzle with caramel.  Roll back up.
  8. Whip together cream, icing sugar and cinnamon to stiff peaks.  Spread over cake.
  9. Drizzle caramel along the cake and take a toothpick through the caramel to make a design.
  10. Slice and serve
